It’s that time of year where pumpkin-everything is pumpkin-everywhere! In an effort to share in the celebration of all-things-pumpkin and of course Fall, I’d like to share this wonderful pumpkin spiced granola recipe with you.
You’ll find that when the heat has penetrated through the granola mixture, your home will smell like warm and comforting spices like cinnamon, nutmeg, and ginger. Forget those candles – just make granola!
My favorite thing to do with this granola is put it with plain, Greek yogurt but also when making my own version of an açaí bowl.
Ingredients:
- 3 cups rolled oats
- 1/2 cup canned pumpkin puree
- 1/3 cup brown sugar
- 1/4 cup olive oil
- 1/4 cup maple syrup
- 2-3 tsp kosher salt
- 1-2 tsp pumpkin spice blend <link My Spice Sage>
- 1/2 tsp vanilla extract (I prefer Vanilla Bourbon Extract from Trader Joe’s)
For a lighter crunch, add the following ingredients to the above:
- 1/2 cup flour
- 4 tsp pumpkin spice blend (instead of 1-2 tsp)
- 3 Tbsp butter, cut into cubes
- 1 tsp vanilla
Directions:
- Preheat the oven 325 degrees F.
- In a large bowl, add the dry ingredients and use whisky to properly incorporate.
- In a small bowl, whisk together wet ingredients.
- Add wet ingredients to dry ingredients and fold in using a spatula.
- Pour the granola mixture onto a sheet pan lined with a Silpat or parchment paper.
- Bake for a total of 45-60 minutes, turning the granola every 15 minutes. Towards the end, just watch to make sure that the mixture is drying but not burning. When it cools, it will harden even more. Every oven is different, so it’s important to watch it.
